Quinoa Goji Oat Cookies

Ingredients

½ Tbsp Water
½ Cup prepared White Quinoa (cooked, drained, cooled)
½ tsp Baking Powder
¼ Cup Golden raisins
¼ Cup Applesauce
¼ Cup coconut sugar
¼ Cup Brown Sugar
¼ tsp Cinnamon
⅛ tsp Allspice
⅛ tsp Nutmeg
3 Tbsp Navitas Naturals Goji Berries
1 Cup Oat Flour*

Directions

*You can pulse oats in the food processor until they become a fine flour. You can also usually find oat flour in the bulk section of natural food stores, but why not make your own?

Preheat oven to 325 degrees F. Line 2 baking sheets with parchment or silicone mats.

In the food processor, blend the raisins and the ½ Tbs water until pureed. Put this puree into a mixing bowl. Add all of the ingredients and stir well until the dough comes together (it will be pretty sticky). Use a cookie scoop to scoop even amounts of dough onto the cookie sheets. Flatten the dough with your fingers. Bake for 15 min or until golden brown.

    Those look so good. I love oatmeal thigns so I might just have to try these this week. You are such a nice mommy making homemade cookies for your family on the weekends. You have definitely inspired me to do the same. Doesn’t hurt that the picture looks so darn yummy.
