Pesto Veggies

Ingredients:

1 sweet potato, cubed

1 yellow onion, chopped

8 oz. mushrooms, quartered

5 oz box spinach

1/4 c pesto sauce

1 bunch asparagus

1 c cherry tomatoes

1 c cooked brown rice

Instructions:

  1. Cook brown rice according to package instructions.
  2. In a deep dish skillet, layer all remaining ingredients in order listed.
  3. Cover and cook over medium heat for about 15 min until potatoes are tender..
  4. Serve over brown rice.
