Fudgy Avocado Brownies (GF/DF/Oil-free)


1 ripe avocado (1/2 c mashed)

1/2 c cacao powder

2 eggs

1 c coconut sugar

1/4 c almond butter

1 t baking powder

1 t vanilla extract

1/4 t sea salt

1/2 c chocolate chips

In a food processor, combine all ingredients except chocolate chips. Process until smooth. Fold in the chocolate chips, then pour batter into a pre-heated (on med-low) and coconut oiled Saladmaster pan. A 1qt or similar makes more of a cake, cut into wedges, while a larger skillet will make a thinner cake that can be cut into brownie sizes. Keep covered, wiping the inside of the lid periodically. Once just the center looks jiggly (professional term LOL), turn off and leave covered to cook the rest of the way through. Let cool a bit before running a rubber spatula around the edges to loosen and turning over onto a plate or cooling rack.
