Rainbow Quinoa Pilaf

Serves 4

-Simple prep, full of flavor, our quinoa pilaf works well as a side dish or salad for your next- dinner.

1 cup Quinoa, rinsed

2 cups Water

1 Bell Pepper, diced

½ Red onion, diced

2 Ribs Celery, diced

1 medium yellow squash, grated

1 medium carrot, grated

½ cup Red Wine Vinegar

¼ cup Extra Virgin Olive Oil

Salt and Pepper to taste

 

Directions:

  1. Bring water and quinoa to a boil. Reduce heat to a simmer, and cover until water has cooked out completely. Let cool in refrigerator at least15 minutes.
  2. Toss cooled quinoa with diced pepper, onion, celery, and carrots vinegar, and oil, salt and pepper and enjoy.
