Sweet and Savory Raw Kale Salad

1 bunch Kale, rinsed and deribbed, and cut into bite size pieces

Juice from 2 lemons

1 tablespoon avocado oil

2 tablespoons dried cranberries

1 sweet potato, diced

½ cup champagne vinegar

Red onion, thin slice

 

*Toss and rub kale with lemon juice and let stand for 30mins-2 hours.

*In a small skillet, heat champagne vinegar and bring to a boil. Shut heat immediately and add sliced onions. Let stand about 20-30 mins.

*Toss with oil, cranberries, sweet potato, and pickled red onion. Serve and enjoy.
