Coconut Cream Ambrosia

2 cans full fat coconut milk, refrigerated overnight

3 tablespoons confection sugar

Pinch of vanilla bean or cinnamon (optional)

4 cups chopped fruits of your choice

*berries, cherries, pineapple, etc. all work well!

 

*Scrape the cream off of the top of the can of coconut milk and reserve liquid for using in other dishes.

*With a hand mixer, whip and aerate coconut milk and add in confection sugar and pinch of vanilla bean (optional)

Mix with fruit salad and enjoy!
