Vegan Stuffed Bell Peppers

Makes 8

1 cup soaked Walnuts, rinsed and drained
½ soaked sunflower seeds, rinsed and drained
½ cup sundried tomatoes
½ cup tomatoes, chopped
1 tablespoon ground fennel seed
¼  chopped celery
¼ cup chopped carrots
1 clove garlic
4 bell peppers, de stemmed and de seeded

Blend ingredients except for the bell peppers.
Cut bell peppers in half and fill with blended mix

    Is this recipe finished? So this is a raw vegan Stuffed Bell Pepper?

      Yes it is! You can cook the bell peppers if you want by lightly steaming or baking in the oven to soften.

    What does “soaked” walnuts and sunflower seeds mean? Soak in what liquid? Water?

      It is always best to soak (in filtered water) all nuts and seeds anywhere from 20 min to a few hours, or I do it overnight, before blending or eating. The benefit is increased enzyme activity, greater absorption of the food’s nutrients by the body and increased digestibility. If you are going to blend, toss out the soaking water and add fresh filtered water.
