Key Lime Pie

Raw and Vegan

Crust:
1 1/2 cup mixed raw nuts
1/2 cup dates
½ tablespoon vanilla extract

Finely chop nuts in a food processor, until no chunks remain but not as fine as flour. Add dates and vanilla. Process until well combined. Press into the bottom of a pie pan.

Filling:
½ cup fresh lime juice
1/2 cup maple syrup
1/8 cup canned coconut milk
1 avocado
1/2 Tablespoon vanilla extract
pinch of sea salt
1 tbsp arrow root powder
1/3 cup coconut oil, melted

1. Pour lime juice, maple syrup and coconut milk into Vitamix or blender.

2. Add avocados, vanilla extract and sea salt.

3. Blend all until smooth. Add arrowroot and melted coconut oil and blend again.

4. Pour mixture over crust and refrigerate for 1 hour to set. Cut and serve. Keep in fridge for up to five days.
